I picked some really beautiful cabbages from the garden this week. Even though they’re cold weather crops, our’s are usually good until July. But since they all come up at once – and I don’t have enough of them to truly offer them in our farmstand – I needed a quick way to enjoy them. I cooked up this incredible Parmesan Cabbage Steaks recipe to use them all in an easy way and I LOVE how it turned out. I made it in my stories over at @sugarmaplekitchen@sugarmaplekitchen and everyone was asking for it.

What is a cabbage steak?

A cabbage steak is basically cabbage that’s been sliced to 1 1/2 – 2 inches thick. You can top them in so many way and really use any ingredients you like to come yup with different combinations.

My Parmesan Cabbage Steaks recipe includes cheese, olive oil, onion powder, garlic powder, garlic salt and paprika. It’s a simple spice mix that gives the cabbage an amazing, delicious and savory flavor that’s perfect for this vegetable. It’s all baked together for about 20 minutes at 415 degrees F. Next I top it off with a little sea salt and ground black pepper before broiling it for 2 minutes. Finally, I add on some pancetta and fresh parsley. It’s a

recipe you can make in less than 30 minutes and something you can have for an easy lunch or simple dinner.

Reasons to love it

I love my Parmesan Cabbage Steaks recipe because some nights you really need a simple, delicious meal. This one is wonderful for that. There’s so many flavors layered in this easy dish and it can be made in less than 30 minutes. Cooking the cabbages at a high temperature like 400 degrees and then broiling them really brings a beautiful caramelization to the vegetable. Combined with the parmesan cheese and the crunchy pancetta, you really get a bunch of flavors that mingle together in the most amazing way.

While this meal isn’t part of any specific diet plan, it is a low carb meal that is perfect for anyone adhering to that lifestyle.

Tips for making my Parmesan Cabbage Steaks recipe

  • You can get 5-6 cabbage steaks from one large cabbage. I usually end up with 5.
  • Make sure to get all the cabbages as close to the same thickness as possible. I honestly always struggle with this and will shave them down on one side or the other after cutting if I need to.
  • I use shaved parmesan in this because I like how it melts, but you can use shredded too.
  • You don’t need to use the pancetta on this if you want to keep it vegetarian. And you can replace the pancetta with bacon if you prefer. Use 8 pieces of chopped bacon in place of the pancetta if you can’t find it.
  • I use extra virgin olive oil in this recipe and I recommend that here.
  • As always use fresh cracked pepper and sea salt. You can wait to season with these until after you take the first bite if you like because there’s already garlic salt in the oil rub and salty pancetta.

Ingredients

  • 1 large cabbage
  • 1/4 cup extra virgin olive oil
  • 1 tsp. onion powder
  • 1 tsp. garlic powder
  • 1/2 tsp. garlic salt
  • 1/2 tsp. paprika
  • 1 cup parmesan
  • 10 oz. pancetta
  • 2 Tbsp. chopped, fresh parsley
  • Sea salt and pepper to taste

Instructions

  • Preheat the oven to 400 degrees.

  • Wash and clean the cabbage. Pull off any outer leaves that look damaged and then slice to 1 1/2 inch thick. You should get 5-6 steaks from one cabbage.

  • Combine the olive oil, onion powder, garlic powder, garlic salt and paprika. Brush over the tops of the cabbage steaks. You only have to add this to one side.

  • Add the cabbage steaks to the oven for 20 minutes.

  • While the cabbage cooks, make the pancetta in a pan on the stove. It will take about 3 minutes. Watch for it to turn a deeper red color and then remove it from the burner.

  • Remove from the oven, add a little salt and pepper if you like and then add the parmesan on the tops of the cabbage.

  • Broil for 1-2 minutes. I always go 2 so the cheese is melted and a little crispy on top.

  • Add on the pancetta and parsley and enjoy!
