This amazingly delicious instant pot & oven Salsa Chicken Recipe is one of my favorite quick, easy dinner recipes you will love. We all have those recipes we have memorized that are the fast ones for when you need a quick dinner.

I’ve been making this WW chicken recipe for years, but I got SUPER excited when I discovered this recipe is actually ZERO points for WW members with points, and it’s low in calories for everyone.

WW (Weight Watchers Reimagined) Mexican Food

This IP Salsa Chicken recipe is versatile and makes great Mexican burrito bowls, taco salad, or chicken tacos for an easy weeknight dinner.

You can actually create an entire ZERO POINTS DINNERwith Weight Watchers points with this recipe, too.

  • Start with cauliflower rice as your base. (0 points for everyone)
  • Add black or pinto beans (0 points for some)
  • Add Easy Salsa Chicken (0 points or low points)
  • Top with lettuce and tomato (0 points for all)
  • Add additional salsa and plain, fat free (0 points for all)
  • Serve over a bowl of lettuce for chicken taco salad (0 points for all).
  • Serve with a whole wheat tortilla (add points) for a chicken taco.

Crock Pot – Cook chicken for 4 hours on High.

Oven – Bake in 9×9 dish for 30 minutes at 350 degrees. Remove from oven.

Instant Pot Salsa Chicken Recipe

This delicious Easy Salsa Chicken is as delicious as it is healthy! Chicken cooks quickly in the Instant Pot or oven and stays tender. Use the chicken shredded on top of rice and beans for a hearty dinner.

Ingredients

  • 4 chicken breasts fresh or frozen
  • 15 ounce salsa 1 jar
  • 1/2 cup chicken broth or water
  • 1 cup Greek yogurt plain, non-fat

Instructions

  • Add chicken breasts to Instant Pot inner pot.

  • Add chicken broth or water.

  • Top with salsa.

  • Cook on “Manual” or “Poultry” for 15 minutes.

  • Natural or quick release.

  • Optional – if you desire a thicker sauce, simmer on “saute” for 5 minutes.

  • Allow to cool for 10 minutes.

  • Remove chicken, chop with knife or shred with 2 forks. Return chicken to pot.

  • Stir in 1 cup plain, non fat Greek yogurt.

  • Serve over rice, over taco salad, or in tortillas (additional points).
